Strawberry Soup ~ Souper #SundaySupper!

I’m so excited for today’s Soup-er (get it???) #SundaySupper, hosted by my friend Pam from The Meltaways.

While most of the #SundaySupper participants seem to be attempting to warm their bones with warm and comforting soups, I decided to go another direction.  I decided to transport myself away from the cool temps straight to summer vacation.

I know I’ve shared several times here in the Cocina about how much my family loves Disney World.  We’re deep in the midst of planning our summer Disney trip.  And in an effort to make the time pass until the day gets here that we’ll be on an airplane to Florida, I’m trying to make Texas feel like Florida in any way that I can.

This Strawberry Soup is served at one of Disney World’s restaurants, 1900 Park Fare at Disney’s Grand Floridian Resort & Spa.  We’ve been to the restaurant itself and enjoyed this soup.  And it is SO delish.

My wife has ensured that Disney food rolls out of our kitchen as often as possible.  She’s done that by buying me all of the Disney cookbooks I can get my hands on.  This recipe for Strawberry Soup comes from the Disney cookbook, Delicious Disney.

You may think that this Strawberry Soup would be more appropriate for summer.  But here’s where you’re wrong, people.  This soup is made with frozen strawberries.  So, if you’re trapped in your home with a foot of snow, you can transport yourself straight to summer in a few minutes through the use of your blender.

This is one of those dishes that you can have for dessert, as a snack, or even for a brunch.  You can use all low-fat and low-cal ingredients, and although the soup tastes rich, you can rest assured that you’re not eating something bad for you.  And this is important…since summer = swimsuit weather.

Strawberry Soup

Ingredients

  • 1 1/4 lb. frozen strawberries, thawed with any juice
  • 1 cup half and half (can use fat free half and half)
  • 1/8 cup sour cream
  • 1/4 cup nonfat plain yogurt
  • 1 tsp. sugar (optional)
  • Fresh strawberries for garnish

Instructions

Blend frozen strawberries, half and half, sour cream, and yogurt in a blender until smooth. Taste for sweetness and add sugar if desired. Blend after any sugar is added to ensure smooth soup.

Chill soup before serving. Serve with fresh strawberries as a garnish.

The flavors in this soup are light and it’s almost like sipping a strawberry.
