Apple Cinnamon Dessert Chimichangas ~ Autumn Apple Party for #SundaySupper!
This week’s #SundaySupper is being hosted by Cindy of Cindy’s Recipes and Writings. Cindy is bringing us straight from summer to fall with an amazing Autumn Apple Party!
I have to be honest and say that when I heard this week’s theme, I had a moment of hesitation. Why? Because Jen doesn’t really *do* apples. I’d rather eat just about anything other than an apple. Maybe not meat on a bone, but just about anything else.
So, if I was going to participate this week, I was going to go Jen-style for this apple party.
The dish that I’m serving up in the Cocina today almost didn’t get made at all. I originally signed up to make a different dish this week. I found an amazing recipe, cooked it up, and I hated it. Let’s just say it left something to be desired. Okay, frankly, it sucked. (‘Scuse my French) I was SO sad when I had to toss the whole thing in the trash.
I ended up making a HUGE batch of delicious apple pie filling with my apples (you can find the original recipe for the apple pie filling I made on Baker Bettie) and had nothing to do with it.
What could I make with apple pie filling?
Dessert chimichangas, that’s what. Sometimes, even I am surprised by my genius.
A chimichanga is a fried burrito. Basically, this is a fried apple pie burrito.
I’m going to give you a moment to let that sink in…
This is a fried apple pie burrito. And it is the BOMB, y’all.
Even if you don’t like apples, even if you’d rather eat almost anything other than apples, you need to try these Apple Cinnamon Dessert Chimichangas. Consider this recipe a gift from me to you.
Happy Autumn Apple Party, y’all!
Cinnamon Apple Dessert Chimichangas

Ingredients
For the Apple Pie Filling
- 4 baking apples, peeled and chopped (I used a mix of granny smith and gala apples)
- 1 1/2 cups water
- 1/4 cup cornstarch
- 3/4 cup sugar
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 Tbs. lemon juice
For the Chimichangas
- 8-10 small tortillas
- 1/2 cup sugar
- 1 Tbs. cinnamon
- Oil for frying
Instructions
For the Apple Pie Filling
Combine the water, cornstarch, sugar, cinnamon, salt, and lemon juice in a medium saucepan and bring to a boil. Cook for approximately 3 minutes, or until the mixture becomes very thick.
Add the chopped apples and reduce to a simmer. Allow the apple mixture to simmer until the apples become just tender (approximately 10 minutes). Allow the mixture to cool.
For the Chimichangas
Mix cinnamon and sugar in a shallow bowl and set aside.
Spoon apple pie filling across the bottom 1/3 of the tortilla.
Roll in both sides of the tortilla before rolling up the bottom of the tortilla over the filling, and then continue to roll the tortilla up like a burrito.
Meanwhile, heat a small skillet with 1/2 an inch of oil. Once oil is hot, fry the chimichangas on all sides until the tortilla turns golden brown. (approximately 30 seconds on each side)
Remove the chimichangas to a paper towel-lined plate and allow to drain briefly. Immediately roll the warm chimichanga in the cinnamon sugar mixture to coat and serve.
You can serve the chimichangas drizzled with caramel sauce if you desire.
I desired so I drizzled caramel sauce over my chimi…and it blew my ever lovin’ mind.
There were a few extra of these little babies and I rewarmed them in the microwave the next day and they were STILL fabulous.
So, to all of you who are reading this post…do yourself a HUGE favor. Make a fried apple pie burrito/Apple Cinnamon Dessert Chimichanga. You deserve it.
You don’t even have to love apples to love these. You just have to love fabulous food.

I’ve always wondered what to do with the extra burrito shells when I have burrito night (just the two of us so there are leftover shells). What a fantastic recipe for them. And it would be a fab dessert after savory burritos. Wonderful Jen.

These are a bomb really, but wow, they look amazing Jen! They remind me of my first trips to the US (more than 30 years ago) when I think it was McDonald´s that had a fried rectangular individual apple pie. Happy Sunday!

I am making these this weekend….but I’m thinking of adding CHEDDAR. I know many people who love cheddar cheese on their apple pie. What do you think? Do you think it would be better to shred it on top of the inner filling THEN fry? Or top with cheddar after they come out of the frier?
OMG. You genius! I would shred it on top of the inner filling and then fry. PLEASE, pretty, pretty, please come back and tell me how it is. I’m drooling at the thought!
I will send you pictures!!
Actually, I’m thinking of doing it both ways….(1) put the cheese inside, (2) put the cheese on top, right out of the hot oil.
Results may vary…we will see what works!

I tried these tonight. I thought they would come out more crunchy but the tortilla is still soft
any suggestions???? I tried both flour and corn tortillas to see if that was the case. And I also fried them longer but still they were too soft for my liking!
Was your oil hot before frying? Mine came out crispy immediately, so I’m not sure. If you let them site, they do soften a bit. So, eat them right away!
So I made these last night for friends that came over for dinner and HOLY CRAP!!! SOOOOOOOO good!!! I served them hot with vanilla ice cream and caramel sauce on top and WOW! SO AMAZING! Thank you for sharing the recipe!

How many servings does this recipe make?
I got about 10 chimis out of the recipe, but it depends on how full you fill your tortillas.
I found your recipe on Pinterest and OMG, these were just fantastic! My hubby thought they were a little too sweet on their own, but with some vanilla ice cream that was all remedied!

how many does this recipe make?
Between 8 and 10 chimis, depending on the size of your tortillas and the size of your apples!
I made these apple chimichangas last year from searching your blog and misplaced the recipe. The recipe reminded me of my grandmother’s and mom’s recipe for apple empanadas. My family had requested this as it was sooo good and fairly simple to make. Today, I was determined to find your site again. Oh thank goodness! I felt SO bad!

I made these last night and they were AMAZING!! I was looking for a good apple or pumpkin recipe for the first day of autumn, and something I could make on a $10 budget. I made thirteen I think? My only mishap was not being very experienced at frying things and mistaking ‘hot’ oil for ‘boiling’ oil. My first two turned out a bit burnt, but after I got a sense for how hot the oil should be, they were perfect. They’re great cold too!

Wheeee! Thanks so much for letting me know! Yeah…that oil thing will get ya’…but the pay off is SO worth it!
Can I try this with peaches?
I think this would be perfect with peaches! Just don’t cook them as long in the filling since they’re more tender than apples!

I have done them and they are so good. Sometimes instead of frying them I grilled them fro less calories. Thank you so much for the great and easy recipe. God bless

Can I make these and freeze them to fry later?
Absolutely! I’d let them thaw a bit before frying, though!

These look wonderful & obviously, from the comments, call for all sorts of tasty modifications. Has anyone, or have you, fried them up, frozen them & then reheated them? I’m thinking it could be a wonderful breakfast treat for the kids on the way to school.
I haven’t tried it, and I’m not sure they’d retain crispiness. But, I’d love to know if you try!
Hello, I love the apple filling! My sister used it to make apple pie under my supervision. The whole family loved it! All this while, our apple pie fillings were always watery and the taste were a little bit off. But this recipe allows tasting before baking (while my sister strained herself from finishing a quarter of the filling while stirring). We doubled the recipe but the sugar was limited to 10-12tbsp.
We’re definitely going to stick with this recipe. I’m thinking making them into tartlets and all. Thank you!
These are perfect. They are not difficult to make, and they taste amazing. I am not a fan of apple pie, but I loved these.
These look so good could u freeze them then reheat

can you make the filling ahead of time? Do you recommend heating it in the microwave or in a saucepan for a few minutes?
